Since they are mostly acrylic media they are pretty flexible. I had some older ones that were not as plastic and a bit more chalky so I had to be careful weaving them through the other surfaces like the cholla skeleton here...and I really like the more matte finish of those.
I have several formulas for the gesso to get just the right height of the dried flourish. Sometimes I gild and sometimes like here I have left it white.....

I'm trying to imagine what the gesso flourishes feel like. Are they somewhat plastic and flexible or are they more dry and crunchy like plaster?
